It seems like that’s all it has done around here lately, so much that I am thinking about getting some kamik rain boots, as well as some other rain gear. I have been knitting a little lately, so its been helping the long days go by a little faster. If I can keep this up I will have 3 people’s Christmas gifts done before fall!!

I will be getting back into scrapbooking soon, as I just ordered a digital scrapbook software from Creative Memories. I have to get back on top of all of my pictures. The ones on the computer will all be done with this software, but I will have to finish up all the others I have the old fashion way.

I have a few birthdays coming up so its time to start plannning. For my father in law, he wants a lemon meringue pie. I made out my grocery list with the sale ads and have all the ingredients I need to make the pie. I hope this recipe turns out better than the last one I tried. He will only be able to have a small sliver of it, though, so it has to be perfect!

Ingredients

1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.

3. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.

4. Bake in preheated oven for 10 minutes, or until meringue is golden brown.

The next one is my hubby. He has been looking at amps, so maybe I will look into getting him one like this one.

Maybe once his obsession of looking at amps online is over with, he can get back to working on the two guitars he has half way done in the basement.

I have started my Christmas projects already. Its going to take me a while, so I started last night. They are going to be similar gifts for three different people, just hoping I can get them all completed in time. I just have to keep up on my arm exercises so I don’t loose any strength I have gained thus far.

If I get the hang of digital scrapping, I will be making scrapbooks for gifts as well. I will have to look into external hard drives so I can store all the pages until I can get them printed.

I am going to venture out into a new area of scrapbooking. I will be purchasing my first digital scrapbook software this weekend. I am still unsure as how to do all of it, but have a friend who will show me if I get stuck. I am hoping I can make some photo cards with the software as well.

I have so many pictures on the computer that are just waiting to be scrapped, but I keep putting off getting them printed, as I know its going to cost me lots of money! I won’t even tell you how many pictures, but let’s just say the cost will be in the hundreds of dollars!

Its that time of year… strawberries are ripe and ready for picking. My friend Briana and I made strawberry jam. We had 16 quarts of strawberries and 48, 8 oz. jam jars and 6 kids under the age of 7 (we were hoping they would all get along, and they did!). It took us a little over 2 hours from start to finish.
