Comfy cozy and babies

This sweater/scarf set looks warm and comfy! I just might have to give it a try for this winter!

Cake = healthy?

We are on the health food kick and the boys are grumbling, but oh well! Not only are they getting healthy recipes to enjoy, but they are now taking vitamins and hgh supplements. I found this recipe for a blueberry coffee cake that I am going to make tomorrow… its cake and its healthy too!

Ingredients

* Cooking spray
* 1 cup all-purpose flour
* 1 cup whole-wheat pastry flour or regular whole-wheat flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 3 tablespoons sugar
* 1/2 teaspoon ground cinnamon
* 1/2 cup chopped walnuts
* 1/2 cup packed brown sugar
* 2 tablespoons butter, at room temperature
* 2 tablespoons canola oil
* 2 large eggs
* 1 teaspoon vanilla extract
* 1 cup plain nonfat yogurt
* 1 cup fresh blueberries, or frozen and thawed

Directions

Preheat oven to 350 degrees F. Spray an 8-inch square cake pan with cooking spray.

Whisk together the all-purpose and whole-wheat flours, the baking soda and salt. In a small bowl, stir together the granulated sugar, cinnamon and walnuts. In a large bowl, beat the brown sugar, butter and oil until fluffy. If necessary, use the back of a spoon to press out any lumps in the brown sugar. Beat in the eggs, 1 at a time, beating until fully combined. Beat in the vanilla and yogurt.

Add the flour mixture in 2 batches, stirring until just combined.

Spread half of the batter into the prepared pan. Sprinkle half of the nut mixture over the batter and top with the blueberries, gently pressing them into the batter. Spoon the rest of the batter into the pan, smoothing the top. Sprinkle the remaining nut mixture over the cake, pressing gently. Bake until a wooden toothpick inserted in center comes out clean, about 30 to 35 minutes. Let cool slightly and then unmold and allow to cool completely on a cooling rack. Cut the cake into 2-inch squares.

Cooking healthier

What diets for quick weight loss have you tried? I need to cut out the pop for one, and I know that I will drop a few pounds, but its easier said than done. I will do good for a while, then have one glass and get hooked all over again! *Sigh*

I need to find some healthy recipes to try, and clear out all of the junk in the cupboards. Everyone of us can stand to lose a few pounds, so with all the junk gone, that will be a great starting point! There will be lots of fruits and veggies on the grocery list this week!

This weekend the diet will be thrown out the window, as its “girls weekend in Chicago”, and we are going to the Cheesecake factory for sure this time!

STITCH EXPLANATION:

PATTERN STITCHES
K1, p1 Rib (worked in the round, over an even number of sts)
Rnd 1: *K1, p1, rep from * around.
Rep Rnd 1 for K1, p1 Rib.

K6, p2 Rib (worked in the round, multiple of 8 sts)
Rnd 1: K3, p2, *k6, p2, rep from * around to last 3 sts, k3.
Rep Rnd 1 for K6, p2 Rib.

NOTES:

1. If desired, use a spare knitting needle one or two sizes larger to cast on and bind off.

2. Thigh Highs are meant to fit with negative ease (Thigh High circumference should be less than body measurement) for a snug fit.

3. Thigh Highs are worked from top down for ease in adjusting the size. After a few rounds have been worked, slip sts onto a spare length of yarn or a long circular needle and test the fit by sliding the piece up your leg. Change to larger or smaller double pointed needles to achieve the desired fit.

THIGH HIGHS (make 2)
Beg at top edge, loosely cast on 96 (108) sts. Divide sts onto 3 double pointed needles and join, being careful not to twist. Place marker for beg of rnd.
Work in K1, p1 Rib for 2 in. (5 cm).
Work in K6, p2 Rib for 12 rnds.
Next Rnd: K2tog, work in K6, p2 Rib as established to last 2 sts, k2tog.
Rep last 13 rnds until 56 (72) sts remain, then work even (if piece is not long enough) in K6, p2 Rib until piece measures about 32 in. (81.5 cm) from beg.
Change to K1, p1 Rib and work for 4 in. (10 cm). Bind off loosely.

FINISHING
Weave in ends.

Holiday’s…

Why do they have to have so many sweets for holiday’s!? This is not how to reduce body fat! I told my mother in law yesterday to get rid of any and all candy when she knows we are going to be coming over! Yesterday was terrible! She had out the Easter Baskets, with lots of candy in them! I have no will power when it comes to sweets ~ unless its chocolate cake! Which didn’t sit well with my father in law as he made a chocolate cake and wanted me to try it

Nope! I have never been a fan of chocolate cake, and especially one made with coffee! Two things I just don’t care for!

I told him to make a white or yellow cake with the pudding frosting, then I would try it.
