Baking is a struggle as well

I can’t even bake like I want to with this bum arm! I tried to make my pizza crust tonight, and the kneading of the dough was not fun! I wanted to make some cinnamon rolls this weekend, but after tonight that will be out of the question. About the only thing I am good for right now is calling around to auto insurance quotes, as we will have another driver in the family.

I am trying to put this off a little while longer, as I don’t think he’s ready to take on the responsibility of driving just yet. Of course he says he is, but me, not so much. He has some growing up to do first. We will talk again this summer.

Stuffed Chicken Breast

Someone posted this online, didn’t have the exact measurements, so I am going to wing it. Hopefully they turn out. They sound yummy!

4 chicken breasts

1lb cream cheese

2tsp mango curry sauce

pepper, sage, basil, thyme

dried chopped onion

1c dry white wine

Preheat oven to 375

In a mixing bowl blend cream cheese, mango curry sauce, and spices until smooth.

Slice open the chicken breast and place 1/4 of the mixture in the opening. Repeat for each chicken breast.

Pour wine over the chicken breasts

Top chicken breasts with more pepper and spices

Cover with foil and cook for 40 min. Remove foil and cook another 20 min or until meat temperature reaches 165.

Yarn shopping

I was out and about today, and decided to stop and look at yarn. Why? I don’t know, its not like I can knit right now. But I always like to look. Nothing jumped out at me. On the way out of the store, there was a lady outside asking if we wanted free life insurance quotes. Found that a little strange, as I thought they weren’t allowed to do this on private property. I told her no thanks and got in my car.

Next stop, the grocery store to get a few things that I forgot when I was out earlier. I found a new flavor to the Crystal Light packets. Pomegranate Lemonade.. its not bad. I need to start drinking more water! Just wish I would have grabbed a bottle of water at the checkout, so I wouldn’t have been tempted to stop at a drive thru to get a pop.

A girl needs cute slippers

Its tax season, so that means there will be lots of sales going on. I am still waiting for my tax info to come for my daycare things so I can file ours. Not sure what we will be getting back, as we won’t be claiming our oldest anymore.

Hubby needs to stock up on some tools that he will need for work, along with a tool chest. Me I really want these cute slippers. I have heard nothing but great things about Uggs. The look so comfy, and they are pink, one of my other favorite colors! I like that they say there are indoor/outdoor wear. I can head out the door to take the kids to school (on good weather days) without having to take them off! Now if they were a purple, I would be all over them in a heartbeat. I have to butter up my hubby to see if I can get these. Or maybe some other style of Uggs, so many decisions! I have a pattern somewhere for fake baby Uggs that I knit. If and when my arm is better I may just have to make a few pairs for some friends babies to be. I even think I have some of the suede yarn in my bin of yarn.

No more expensive lotion for me!

I saw this on Coloradolady’s blog and had to try it for myself. I have to say, I am impressed! I wash my hands several times a day, due to the fact I have a home daycare, and am constantly re-applying lotion to my oh so dry hands. It seems like that’ all I do, and they never feel soft and hydrated. Well no more! After applying the lotion the first time I washed my hands, they felt really soft. And since I have washed my hands a few times, and haven’t had to re-apply more lotion.. bonus!

Now if you visit her blog, you will see more photos of how she did it, me I was a little to lazy, and not very steady with my camera, so I gave up taking lots of pics. I still need to stock up on some cutesy jars to store this in, so for now I have some good ole Glad storage containers.

Head on over to your Dollar General store and grab a bottle of baby lotion, a jar of Vitamin E lotion and a jar of Petroleum Jelly (vaseline), then empty out the containers, make sure you get it all. You will have to cut open the baby lotion bottle to get all of this one.

Then put it into your containers. I can’t wait to get some baby food jars that I can decorate up and pass these on as gifts!!
