Thursday blurb
We have just over a week and a half until Trent's surgery. Keeping him well is my main priority, and who gets sick? Me. Great just great! I am keeping my distance from him and have myself full of cold meds! John doesn't want him to get sick, as we are unsure of how much longer we will be keeping our insurance. So many changes going on at his job right now. I have been searching for different insurance online companies to see if we can afford to get our own private health insurance.
I have been busy with my knitting. Finished a baby blanket for Trent's teacher, and am now working on some other baby items for a shower gift for a gal at church. I am planning that shower as well, so I am going to be busy for the next month.
I am looking forward to next weekend… Chicago trip! I am going as just "Jodi". I won't be a mom or a wife, just me! This is a much needed "me vacation"! So glad our tax money will be in our account so I can have some fun money!
Yum-O
I received my Kraft Food and Family mag yesterday. On the cover was a very yummy looking dessert. I had to get cat food and cat litter today, so I made sure I also picked up all the ingredients to make this dessert. I was just going to use a glass bowl I had at home, but had to check to see how much my local store had the trifle bowl for. They were running an ad for 25% off housewares this week, so I grabbed the bowl, it was only $6!!
Layered Strawberry Cheesecake Bowl
3 cups sliced fresh strawberries 3 Tbsp. sugar
2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
1-1/2 cups cold milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 cups thawed COOL WHIP LITE Whipped Topping, divided
2 cups frozen pound cake cubes (1 inch)
1 square BAKER'S Semi-Sweet Chocolate
Make It!
COMBINE berries and sugar; refrigerate until ready to use. Beat Neufchatel cheese with mixer until creamy. Gradually beat in milk. Add dry pudding mix; mix well. Whisk in 1-1/2 cups COOL WHIP.
SPOON half the Neufchatel cheese mixture into 2-1/2-qt. bowl. Top with layers of cake, berries and remaining Neufchatel cheese mixture. Refrigerate 4 hours.
MELT chocolate; drizzle over trifle. Top with remaining COOL WHIP.
I dipped a strawberry in chocolate and put it on top of the cool whip.
Frustrated
I finished the baby blanket I was knitting, after many frustrations! I normally can knit while watching TV, but not while watching the Biggest Loser I guess. I had to rip out so many rows from not paying attention! So glad it is done though! This one was a gift for Trent's homeroom teacher, she is adopting a baby and only let the kids know a few weeks ago. She loved it. She had asked him where her got it, and he proudly said "My mom made it." I feel honored that he thinks that highly of the things I knit!

Now I am working on some other baby items for a shower I am hosting next month at church. I keep looking for some great sales on baby items, not only for the shower, but for my daycare as well. I got rid of everyting last March. I really need a new highchair. I would like to get a wooden one, as they look a little more stylish than the plastic ones. For the bigger kids I would like to get some craft items, and set up a craft area for them. My library is building up slowly, its funny, they race to the toy area every Monday to see if I have added anything new.
Blanket
I just emailed my hubby to inform him on Trent's status after we got home from the doctor. It took forever for him to respond, he said he was in a sales training meeting. Not sure why though, as he is not in sales. But whatever. He then asked what the rest of my day was going to be like. Well now that I don't have to do the afternoon school run, the kids are down for a later nap and I am going to pick up my knitting and make a major dent in this baby blanket. I have less that a week to get it done, as Trent's class is throwing a baby shower for his teacher on the 16th. Hopefully I finish it in time!
New hobby?
I am thinking about adding another hobby to my already long list of hobbies. I would like to learn how to make jewelry. I have seen so many cute items at craft shows, that I think I could make myself. I would make myself lots of earrings and necklace sets. I am not into bracelets so much tho. Not only could I make some to sell, but they make nice gifts as well. I love homemade gifts the best, as they are made with love and the person receiving the items will appreciate them more.
