Going back to school??
I am looking at going back to school, not sure what for though. I should stay in the field of medicine as there is still a need for medical help, but I am just not sure. I would love to take some classes for photography but just can't find any place that has online classes. You know what goes along with going back to school? You guessed it student loans. I dread this, as we have finally paid off all our debt, outside of our house, I just don't know if I want to put us back in debt. Oh the decisions!
A scrappers franchise??
I would love to own my own franchise one of these days. We have looked into several that appeal to me and my hubby, one being a Culver's. They have the best food! Its a step up from the other fast food chains. But what I would really like to own is a Archiver's. I went in my first one this past November, and oh my what a store! They have anything you could imagine for your scrapbooking desires! I talked with one of the ladies there to see if there was one here in Michigan, she said there was, but its on the East side of the state. I would love to have one in Grand Rapids!
Deep Fried Cheesecake
I am so going to make this soon! This might be our dessert for Valentine's Day! I absolutely *love* Paula Deen!

2 cups graham cracker crumbs
1/4 cup sugar
7 tablespoons butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup sugar
3 large eggs
1 (4-ounce) bar white chocolate, melted and cooled slightly
30 Oriental spring roll wrappers
Egg wash (whisk 1 egg with 1 cup milk)
1 (4-ounce) bar semisweet chocolate, chopped
Vegetable oil, as needed
Powdered sugar, as needed
8 ounces chocolate sauce, in squirt bottle
Whipped cream
Preheat oven to 350 degrees F.
Cheesecake:
In a medium bowl, combine cracker crumbs, sugar, and melted butter. Press firmly on bottom and 1-inch up sides of a 9-inch spring form pan. Bake 8 minutes.
In a large bowl, combine cream cheese and sugar. Beat with an electric mixer until fluffy. Beat in eggs, 1 at a time, beating well after each addition. Stir in melted chocolate.
Carefully pour batter into the prepared crust. Bake 45 minutes.
Let cool completely on wire rack. Chill 8 hours before serving to set.
Cut the cheesecake into approximately 3 by 1-inch uniform pieces.
Deep-Fried Cheesecake Rolls:
Heat oil n deep-fryer to 365 degrees F.
Lightly moisten each spring roll wrapper with the egg wash. Blot off excess egg wash with paper towels. Place each piece of cheesecake in the middle of a wrapper. Sprinkle with the chopped chocolate. Fold top of wrapper down over the cheesecake, and both sides toward the middle. Roll each piece of cheesecake toward you until it is completely rolled up. Make sure the egg roll is tightly packed with its edges sealed.
Gently release "egg rolls" into the oil and cook until golden brown, roughly 2 minutes. Using tongs remove the golden-brown "egg rolls" from the oil. Place each "egg roll" in a bowl of powdered sugar and coat well. Place deep-fried rolls of cheesecake on paper towels to cool slightly before serving.
Drizzle with chocolate sauce and top with whipped cream.
Car insurance
I keep looking at online auto insurance to see if we could get our insurance cheaper from other places. Sometimes the quotes are cheaper, and other times they are alot higher. I did lots of searching when our oldest first started driver's training. You wouldn't believe the quotes we got for just trying to add our teen to ours. We finally found a company that was reasonable and have been with them ever since.
Nana’s Apple Cake
I love Tastefully Simple products! They are so quick and easy to make. One of my faves is Nana's Apple Cake, all you have to do is add 2 eggs and 2 cups of chopped apples, mix it all together and bake for 45 minutes. Mmmm
