Baking, baking and more baking
I have been busy baking up a storm to day. First up is Peanut Butter Temptations…. Mmmmmmmm (recipe to follow). Then I had a bunch of muffin mixes I that I am making into mini muffins… we will have chocolate chip, apple cinnamon, and wild berry. Then normal size blueberry and banana muffins when all said and done. I am going to freeze half of them.
Peanut Butter Temptations
About 40 mini peanut butter cups
½ cup (1 stick) butter or margarine, softened
½ cup sugar
½ cup brown sugar, packed
½ cup peanut butter
1 egg
½ tsp vanilla
1 ½ cup flour
¾ tsp baking soda
½ salt
Heat oven to 375. Remove wrappers from candies. Line small muffin pan with liners. Beat butter, both sugars, peanut butter, egg and vanilla until fluffy in large bowl. Stir together flour, salt and baking soda; gradually add to butter mixture, beating until well blended. Shape dough into 1 inch balls, place one in each muffin cup. DO NOT flatten. Bake 10-12 minutes, or until puffed and lightly browned; remove from oven. Immediately press candy into center of each cookie.
Makes about 3 ½ dozen.
